江山市2014-2017年市售食品微生物检测结果分析

摘要
目的了解江山市市售食品中微生物污染及致病菌检出情况,为加强食品安全监管和预警提供科学依据。方法按照2014-2017年浙江省食品微生物及其致病因子监测方案要求,采集江山市在售食品10类322份样品进行一般卫生指标检测,开展金黄色葡萄球菌、沙门氏菌等10种食源性致病菌的检测。结果江山市在售食品8类285份食品样品一般卫生指标的不合格率为48.42%,在售食品10类322份食品样品检出致病菌64株,总检出率为19.88%;检出常见的7种食源性致病菌,沙门氏菌和蜡样芽孢杆菌检出率最高,分别为45.31%和26.56%;致病菌检出率最高的是肉与肉制品和焙烤及油炸类食品,分别达45.31%和33.33%。结论江山市市售食品均存在不同程度的微生物及致病菌污染,即食类食品卫生状况差,肉及肉制品致病菌污染严重,食品安全监管部门应加强食品安全监督管理。
        Objective To understand the contamination of microorganisms and the detection of pathogenic bacteria in the food sold in Jiangshan city and provide the scientific basis for strengthening food safety supervision and early warning.Methods According to the requirements of the monitoring program of food microorganism and its pathogenic factors in Zhejiang province from 2014 to 2017,322 food samples from 10 kinds of food in Jiangshan city were collected for general hygienic indexes and 10 kinds of foodborne pathogenic bacteria were detected.Results The unqualified rate of general health index of 285 food samples from 8 categories sold in Jiangshan was 48.42%.Sixty-four strains of pathogenic bacteria were detected in 322 food samples from 10 kinds of food.The total detection rate was 19.88%,and 7 common foodborne pathogens were detected,of which the ratio of Salmonella and Bacillus cereus were the highest,respectively 45.31% and 26.56%.Among the detected food species,the highest detection rates of bacteria were in meat and meat products and roasted and fried foods,which reached 45.31% and 33.33% respectively.Conclusion The food products of Jiangshan are contaminated by different degrees of microorganisms and pathogenic bacteria.The hygienic condition of instant food is poor,and the pathogenic bacteria of meat and meat products are seriously polluted.The food safety supervision department should strengthen the supervision and management of food safety.
