基于PEST的湘菜产业绿色发展战略研究

摘要
通过PEST模式分析湘菜产业绿色发展所处的外部环境,制定湘菜产业绿色发展战略,以期为湘菜产业以及其他菜系产业绿色发展提供参考。运用PEST模型,对影响湘菜产业发展的政治环境因素、经济环境因素、社会环境因素和技术因素等进行详细分析。湘菜产业拥有坚实的政策基础、良好的经济支持、饮食观念的转变、优质的教育环境等较好优势,同时存在部门设置不科学、企业缺乏正确理念、集群链接机制不完善、教育对象存在局限性等问题,面临着供给侧结构问题和互联网+新兴技术对湘菜产业绿色发展的挑战,提出构建湘菜产业绿色发展体系、打造湘菜产业绿色发展集群、树立湘菜产业绿色发展理念和培养湘菜产业绿色发展人才等四大发展战略。
In order to providing the green development reference for all cuisine industry, the paper analyzes the development environment by PEST model, and makes a strategy for the Hunan Cuisine green development. The paper analyzes external factors by PEST model, such as political factors, economic factors, social factors, technical factors. The results show that the Hunan Cuisine has the advantages of well political foundation, good economic support, new diet concept and superior educational environment. At the same time,there were some issues, such as unscientific sector setup, untrue operating concept, incomplete link mechanism, limited educational object and so on. There are some challenges such as the supply-side structural problem, the emerging internet technologies and others on the green development of Hunan Cuisine industry. This paper puts forward four major strategies, such as constructing green development system, building green development industry clusters, establishing green development concept, cultivating green development talent.
