摘要
试验选取相同日龄及饲养条件下乌蒙乌骨鸡生产的绿壳蛋与白壳蛋各60枚,比较分析二者在蛋品质、常规营养指标和矿物质元素含量方面的差异。结果:绿壳蛋与白壳蛋的蛋品质指标中,蛋重、蛋壳重、蛋形指数、蛋壳厚度、蛋黄比率、蛋白比率指标差异不显著(P>0.05),绿壳蛋哈氏单位、蛋白高度极显著高于白壳蛋(P<0.01);蛋营养指标中,能量、碳水化合物、粗蛋白、粗脂肪、氨基酸总量及各类氨基酸含量差异不显著(P>0.05),白壳蛋胆固醇含量极显著高于绿壳蛋(P<0.01);矿物质元素及维生素指标中,Na、Cu、Se、P、Fe、Zn差异不显著(P>0.05),绿壳蛋V_E、叶酸、K含量极显著高于白壳蛋(P<0.01),但V_(B1)含量极显著低于白壳蛋。结论:综合各项指标评价,乌蒙乌骨鸡生产的绿壳蛋品质及微生素含量优于白壳蛋。
        The aim of this study was to investigate the differences in the egg quality,conventional nutrient index and trace element content of the experiment selected 60 green and white shell eggs of Wumeng black-bone chickens under the same age and the same feeding conditions. Results: that the difference between the green and white shell egg weight,eggshell weight,egg shape index,egg shell thickness,egg yolk ratio and protein ratio index was not significant( P>0.05). The haugh unit index was significantly higher than that of white shell eggs( P<0.01). The difference of energy,carbohydrate,crude protein,crude fat,total amino acid and various amino acid contents in egg nutrition Kindex was not significant( P> 0.05),and the difference in cholesterol content was extremely significant( P<0.01). The contents of V_E,folic acid and K in green shell eggs were significantly higher than those in white shell eggs( P<0.01),but the differences of Na,Cu,Se,P,Fe and Zn were not significant( P>0.05). Conclusion: the quality and micronutrient level of green shell eggs in Wumeng black-bone chickens is better than that of white-shell eggs.
