摘要
建立了一种快速、宽线性范围和较低检测限的高效液相色谱(HPLC)方法,分析姜及其相关产品中4种主要姜辣素——6-、8-、10-姜酚及6-姜醇含量,用于生姜、干姜、终端产品液态姜汁饮料和固态速溶姜茶,以及超临界CO2萃取得到富含姜辣素的姜油树脂和进一步分离纯化得到的高6-姜酚含量样品的检测及分析比较。结果表明:生姜中6-、8-、10-姜酚含量分别为1.461、0.325mg/g和0.568mg/g,未检测到6-姜醇;干姜中6-、8-、10-姜酚及6-姜醇的含量分别为8.587、1.612、3.504mg/g和0.662mg/g;3种固态速溶姜茶中的6-、8-、10-姜酚和6-姜醇含量范围在(0.432~0.453)、(0.108~0.122)、(0.185~0.234)mg/g和(0.094~0.109)mg/g,无显著性差异(P>0.05);姜汁饮料中只检测到少量6-姜酚,含量为0.004mg/L;姜油树脂中6-、8-、10-姜酚及6-姜醇的含量分别为212.803、50.831、88.004mg/g和11.411mg/g;在进一步分离纯化的高纯度6-姜酚样品中仅检测到6-、8-、10-姜酚,含量分别为891.329、79.145、18.717mg/g。检测结果满意,可实际用于姜及其各类产品中主要姜辣素含量的检测。
        A high-performance liquid chromatographic(HPLC) method was established to fast analyze the content of four main gingerols(6-, 8-, 10-gingerol and 6-shogaol) in ginger and its related products, which has a wide linear range and low detection limit. The method was applied to detecting and analysising fresh ginger, dried ginger, ginger juice beverage, instant ginger tea, gingerol-rich ginger oleoresin obtained by supercritical CO_2 and further separation and purification of high 6-gingerol content sample.The results showed that the contents of 6-, 8-, 10-gingerol in fresh ginger were 1.461, 0.325 mg/g and 0.568 mg/g, respectively. No 6-gingerol was detected. The contents of 6-, 8-, 10-gingerol and 6-shogaol in dried ginger were 8.587, 1.612, 3.504 mg/g and 0.662 mg/g. Respectively, the contents of 6-, 8-, 10-gingerol and 6-shogaol in three solid instant ginger teas ranged from(0.432~0.453),(0.108~0.122),(0.1854~0.234)mg/g and(0.094~0.109)mg/g, no significant difference(P>0.05); only a small amount of 0.004 mg/L of6-gingerol was detected in ginger juice beverage; the contents of 6-, 8-, 10-gingerol and 6-shogaol in ginger oleoresin were 212.803, 50.831, 88.004 mg/g and 11.411 mg/g; and only 6-, 8-, 10-gingerol was detected in further purified 6-gingerol samples. The contents were 891.329, 79.145 mg/g and 18.717 mg/g respectively. The results were satisfactory and could be applied to the determination of the main content gingerols in ginger and its products.
