摘要
目的:研究不同干燥方式及清炒对荷叶中荷叶碱和槲皮素含量的影响。方法:以荷叶碱和槲皮素含量为指标,对烘干、晒干、阴干及其清炒荷叶样品用高效液相色谱法进行测定,比较荷叶碱和槲皮素含量。结果:不同干燥方式及清炒后荷叶碱含量由高到低依次为:清炒烘干荷叶、清炒晒干荷叶、烘干荷叶、晒干荷叶、清炒阴干荷叶、阴干荷叶;槲皮素含量由高到低依次为:清炒烘干荷叶、清炒晒干荷叶、清炒阴干荷叶、烘干荷叶、晒干荷叶、阴干荷叶。烘干荷叶中的荷叶碱含量是晒干荷叶中含量的1. 23倍,是阴干荷叶中含量的2. 43倍,经清炒后烘干荷叶、晒干荷叶、阴干荷叶中的荷叶碱含量分别增加46. 70%、45. 84%、78. 83%;烘干荷叶与晒干荷叶中的槲皮素含量相近,是阴干荷叶中含量的2. 91倍,经清炒后烘干荷叶、晒干荷叶、阴干荷叶中的槲皮素含量分别增加876. 87%,862. 76%,701. 31%。结论:3种干燥方式及清炒对荷叶中荷叶碱和槲皮素含量有显著影响。
        Objective: To study the effects of different drying methods and stir-frying on the contents of nuciferine and quercetin in lotus leaves. Methods: Taking the contents of nuciferine and quercetin as the indices,the contents of nuciferine and quercetin in dried,sun-dried,shade-dried and stir-fried samples of lotus leaves were determined by HPLC and the results were compared. Results: The content order of nuciferine in the samples with different drying methods and stir-frying was stir-fried dried lotus leaves > stir-fried sun-dried lotus leaves > dried lotus leaves > sun-dried lotus leaves > stir-fried shade-dried lotus leaves >shade-dried lotus leaves;the content order of quercetin was stir-fried dried lotus leaves > stir-fried sun-dried lotus leaves >stir-fried shade-dried lotus leaves > dried lotus leaves > sun-dried lotus leaves > shade-dried lotus leaves. The content of nuciferine in dried lotus leaves was 1. 23 times as that in sun-dried lotus leaves,and 2. 43 times as that in shade-dried lotus leaves. After stir-frying,the content of nuciferine in dried lotus leaves,sun-dried lotus leaves and shade-dried lotus leaves was increased by 46. 70%,45. 84% and 78. 83%,respectively;the content of quercetin in dried lotus leaves and sun-dried lotus leaves was similar,which was 2. 91 times as that in shade-dried lotus leaves. After stir-frying,the content of quercetin in dried lotus leaves,sun-dried lotus leaves and shade-dried lotus leaves was increased by 876. 87%,862. 76% and 701. 31%,respectively.Conclusion: Three drying methods and stir-frying have significant effects on the contents of nuciferine and quercetin in lotus leaves.
