摘要
黄浆水作为白酒固态发酵主要副产物之一,其中含有大量可循环利用成分。经理化实验分析发现黄浆水中含有乙醇、有机酸和残余淀粉,而这些物质含量的多少也是判定白酒发酵的一种手段。黄浆水常规检测为以后生产起到重要的指导作用。
Yellow slurry water is one of the main by-products of liquor solid-state fermentation, which contains a lot of recyclable components. It was found that there were ethanol, organic acid and residual starch in yellow slurry water, and the content of these substances was also a method to determine fermentation of liquor. Routine detection of yellow slurry water plays an important guiding role in liquor production.
