摘要
食品添加剂在现代食品工业中应用广泛,然而,近年来滥用食品添加剂所引发的食品安全事件时有发生,食品添加剂的安全性倍受关注。因此,建立快速、灵敏、准确的食品添加剂的检测方法,对于保障食品质量与安全具有十分重要的现实意义。本文重点对近三年来国内食品添加剂中的着色剂、抗氧化剂、甜味剂、防腐剂及食用香精香料的检测方法进行了综述。
        Food additives have been widely used in modern food industry. However,the food safety incidents happened from time to time because of the abuse of the food additives in recent years,the security of food additives had attracted much attention. Therefore,it is of great practical significance to establish rapid,sensitive and accurate detection methods for food additives in food samples to ensure food quality and safety. This paper focuses on reviewing the domestic research development of detection methods and their applications of colorants,antioxidants,sweeteners,preservatives and flavorants for nearly three years.
