摘要
随着生活水平的提高,单纯口感好的食品已经不能满足人们的需求。传统甜味剂蔗糖虽然甘甜适口,但过量食用容易引起肥胖症、糖尿病、高血脂症、龋齿等疾病。这样,有利于健康的新型食品甜味剂就应运而生。乳糖醇作为一种低热量的甜味剂日益受到人们的关注。乳糖醇不仅味甜还具有预防龋齿、增殖肠道有益菌群、有利通便、降低脂肪积累、保护肝脏等保健功能,而且是糖尿病患者可食用的甜味剂,这些特性是传统产品所不具备的,作为一种新的保健型食品添加剂,其在食品开发应用中具有很大的潜力。本文介绍了乳糖醇的制备方法、理化性质、功能特性及其在食品中的应用。随着对乳糖醇相关特性研究的深入,许多新型食品的开发前景已经展现在人们的面前。
        With the improvement of living standards,food that only tastes well may not meet consumer's needs. Although the traditional sweetener—sucrose is sweet and delicious,but excessive consumption can easily lead to obesity,diabetes,hyperlipidemia,dental caries and other disease. More new sweetener that benefits to health are invented. As a low calorie sweetener,the lactitol is gradually welcomed by consumer. Lactitol is not only sweet but also has the health function such as prevention of cavities,the proliferation of beneficial intestinal flora,conducive to stool,reduce fat accumulation,protect the liver and so on. It is the sweetener for diabetics patient. Therefore,as a new health-food additive,it has a great potential in the applications of food development. This article describes the preparation,the physical and chemical properties and the functional properties of lactitol,and its application in food. With further study of lactitol's properties,more prospects of new usages will be discoved.
