摘要
本文研究了在无溶剂条件下Novozym435脂肪酶催化合成月桂酸单甘酯,采用高碘酸氧化法和酸值滴定法对产品进行单甘酯含量及月桂酸含量的分析。同时研究了温度、月桂酸与甘油的摩尔比、酶用量、反应时间、水用量、分子筛用量等六个因素对反应的影响,并选用L25(65)正交试验,探讨合成月桂酸单甘酯的最佳条件。结果表明:56℃下,月桂酸与甘油摩尔比为1∶1.5,酶用量为0.8%,反应15 h,水用量为0.56%,分子筛用量为2%,月桂酸单甘酯含量达到81.5%。
        In this paper, the synthesis of glycerol monolaurate catalyzed by Novozym435 lipase in the absence of solvent was studied. The monoglyceride content and lauric acid content were analyzed by oxidation of periodate acid and titration of acid. The effects of temperature, molar ratio of lauric acid and glycerol, enzyme dosage, reaction time, water dosage and molecular sieve dosage in the reaction were also studied. To identify the best conditions for the synthesis of monoglyceride lauric acid were studied by using the orthogonal test of L25(65). The results showed that: at 56 ℃, the molar ratio(acid:glycerol) was 1∶1.5, the amount of enzyme was 0.8 %, the reaction time was 15 h, the amount of water was 0.56 %, the amount of molecular sieve was 2 %, and the content of glycerol mono laurate reached 81.5 %.
