摘要
21世纪以来大众餐饮蓬勃发展,火锅餐饮行业发展尤其快速。火锅底料作为火锅行业的主要产品,单独销售的火锅底料市场逐步扩大。课题组选择东北地区经济较为繁荣且外来人口众多的大连市为主要实验城市,实地调研大连市火锅底料市场现有的供给情况和东北地区消费者对火锅底料的满意与需求情况。根据对东北地区火锅底料市场的供给与火锅底料消费者的期望情况,提出火锅底料产品的改进意见,促进火锅底料产品创新与发展。
        Since the 21st century,the mass catering industry has been developing vigorously,especially the hotpot catering industry.Hotpot condiment is the main product in the hotpot industry,and the market of hotpot condiment sold separately is gradually expanding.The research group chose Dalian,which has a prosperous economy in Northeast and a large number of immigrants,as the main experimental city to investigate the current supply of hotpot condiment market in Dalian and Northeast consumers' satisfaction and demand for hotpot condiment.According to the supply of hotpot condiment market and the expectation from hotpot condiment consumers,suggestions for the improvement of hotpot condiment products are put forward to promote the innovation and development of hotpot condiment products.
