外源性硼酸在大豆制品——腐竹中的形态研究

摘要
研究外源性硼酸在大豆制品腐竹中的形态分布并鉴定。制备分别添加0%,5%,10%,15%,20%,30%硼酸的腐竹,采用Sephadex G50凝胶柱将腐竹中不同形态的硼化合物进行分离,利用~(11)B NMR扫描鉴定外源性硼酸在腐竹中的形态分布。结果表明:外源性硼主要以游离态硼酸和复合态硼化合物存在于腐竹中,其中约84.7%~93.5%以游离硼酸的形式存在,约6.5%~15.3%以硼复合物的形式存在。
        The forms and characterized of additional boric acid in soybean yuba were investigated in the study. Boric acid in different contents(0%, 5%, 10%, 15%, 20%, 30%) were added in yuba, and different forms of boron compounds in yuba were isolated by Sephadex G50 gel column.11 B NMR were utilized in order to identify and quantify the different forms of boron. The results show that additional boron exists in yuba with free boric acid and complex boron compound, of which about 84.7%-93.5% exists in the form of free boric acid, and about 6.5%-15.3%exists in the form of boron complex.
