摘要
文章以明确报道的具有解酒护肝功效的葛根、葛花、丹参等药食同源材料为原料,经复合酶酶解和鼠李糖乳杆菌217-8发酵制备成酵素,对其黄酮、葛根素、多酚等活性成分含量及总抗氧化能力进行检测。结果表明,该酵素与原材料对照,其葛根素含量提高了7倍,黄酮含量提高了3倍,氨基酸含量提高了3倍,多酚含量提高了80 mg/L,抗氧化能力提高了92%,以上指标均是与加速酒精代谢及保护肝脏相关的指标。因此,优选并配伍的葛根、葛花、丹参、山楂、云茯苓等药食同源原料经复合酶解和微生物转化制备成酵素,可将其天然活性成分完整保留并有效释放,同时产生有益活性次级代谢产物,具有潜在的解酒护肝功能。
This article was based on well-reported drug and food homogenous materials, such as Pueraria lobata, Flos puerariae and Salvia mil, which have antialcoholism and liver protection effects. The ferment was prepared by enzymatic hydrolysis of complex enzymes and the fermentation of Lactobacillus rhamnosus 217-8. The content of active ingredients such as flavonoids, puerarin, polyphenols and total antioxidant capacity were tested. The results showed that the content of puerarin was increased 7-fold, the content of flavonoids was increased 3 times, the content of amino acids was increased 3 times, the content of polyphenols was increased by 80 mg/L, and compared with raw materials, the antioxidant capacity was improved 92%. The above indicators were related to accelerating alcohol metabolism and protecting the liver. Therefore, preferred and compatible raw materials of Pueraria lobata, Flos puerariaeand Salvia mil, hawthorn, and poria cocos, etc, are prepared into ferment by complex enzymolysis and microbial transformation, and their natural active ingredients can be completely preserved and effectively released. At the same time, beneficial secondary metabolites were generated, which have potential antialcoholism and liver protection functions.
