摘要
以枳实、果葡糖浆、白砂糖、明胶、卡拉胶为主要原料,经过一系列合理的工艺流程,制成具有独特风味的弹性较好的软糖产品。经单因素试验与正交试验研究确定最佳工艺参数为枳实粗提物添加量4%,白砂糖与果葡糖浆的配比为1∶1,明胶添加量8%,明胶与卡拉胶的配比为4∶1,在此条件下制得的软糖产品硬度与弹韧性均达到了理想要求,外观晶莹剔透,拥有独特的香味,具有一定的市场价值。
Based on the acid-insoluble ash,fructose syrup,granulated sugar,gelatin and carrageenan,a series of reasonable technological processes were adopted to make a kind of flexible soft sugar products with unique flavor. Through single factor test and orthogonal test to determine the best technology parameters for crude extractings from acid-insoluble ash content 4%,granulated sugar and the ratio of 1∶1,fructose syrup,gelatin 8%,gelatin and the ratio of 4∶1 carrageenan,at this time of jelly products reach the ideal requirements both hardness and elastic resilience,glittering and translucent get rid of appearance,had a unique fragrance,and certain market value.
