摘要
文蛤(Meretrix meretrix)是一种重要的海洋贝类,其肉质鲜美、营养丰富,含有多种人体必需氨基酸、微量元素、维生素和其它活性物质。研究发现,文蛤多肽、蛋白和酶具有多种生物功能,如免疫调节、抗氧化、抗菌、消炎、抗脂质、抗衰老、降血糖活性、抗高血压和红细胞凝集活性及预防癌症、肝损伤保护作用。总结了文蛤生物活性多肽、蛋白质、酶及酶抑制剂的最新研究进展,并对下一步研究方向进行了展望,旨在为文蛤活性多肽/蛋白利用的深入研究提供参考。
        Marine organisms,which make up approximately one half of the total global biodiversity,are rich reservoirs of structurally diverse biofunctional components. In particular,some of these bioactive compounds are proteinaceous in nature and include proteins,peptides and amino acids. The clam Meretrix meretrix( M.meretrix) belonging to the genus Meretrix and family Veneridae is economically very important marine eurythermal and eurysaline benthic bivalves,and is widely distributed in the eastern Asia. It is an important commercial mudflat shellfish in China. It tastes delicious and contains carbohydrates,protein,and vitamins.M. meretrix is a historically marine food and a valuable source of traditional Chinese medicine( TCM).Documented in the ancient Chinese pharmacopeia Compendium of Material Medica( the 16 th century,by Li Shizhen),M. meretrix could diminish inflammation,treat typhoid fever,hangover and relieve pain. Modern research has verified the effects of M. meretrix on immunomodulatory,antioxidant,antitumor and cancer preventive,antimicrobial activity,antiviral,anti-inflammatory,antioxidant,antilipidaemic,antiaging effects,hypoglycaemic activities,antihypertensive activity,erythrocyte agglutination activity and protective effect on acute liver injury. This article reviews the current knowledge of the existence of peptides/proteins from M.meretrix,such as antimicrobial peptides,antioxidant peptides,ACE inhibitory peptides,immunomodulatory peptides etc.,enzymes and inhibitors. This review also describes various manufacturing techniques for bioactive peptides/proteins using ammonium sulfate precipitation, chemical hydrolysis, and enzymes hydrolysis. Finally,purification methods of bioactive peptides/proteins are described,including gel or size exclusion chromatography,ion-exchange column chromatography,and reversed-phase high-performance liquid chromatography.
