摘要
葡聚糖是制糖工业中一种较为常见的危害物,当糖汁中葡聚糖浓度较高时,会影响到过滤、蒸发、结晶和分蜜等工段,而且会增加废蜜的糖分损失、降低提糖率,从而给制糖生产带来严重的负面影响。目前,最有效的解决方案就是使用α-葡聚糖酶,通过酶解作用将葡聚糖降解成小分子糖类,从而解决过滤等生产问题。本文采用单因素分析法研究pH值、温度、反应时间和葡聚糖酶浓度4个因素对葡聚糖的降解效果的影响,确定在甜菜制糖中α-葡聚糖酶去除葡聚糖的最佳应用条件。结果表明,当葡聚糖浓度在1 g/kg以下时,α-葡聚糖酶的最优作用浓度为5 mg/kg,最适反应温度为50~60℃,最优pH值范围为5.0~7.0,有效作用时间为5~10 min。本研究有效解决了工厂葡聚糖浓度升高、中间汁过滤困难的生产难题,保障了低品质甜菜的正常加工,对甜菜糖的生产具有积极的指导意义。
        Dextran is a common adverse element in beet sugar industry. High concentration of dextran in sugar juice affects filtration, evaporation, crystallization and purging processes, and increases the loss of sugar and reduces the sugar extraction rate. Thus, it negatively affects the sugar production. At present, the most effective solution is to use α-glucanase to degrade dextran into small molecular carbohydrates by enzymatic hydrolysis, so as to solve the production problems such as filtration. In this study, the effects of pH, temperature, reaction time and concentration of glucanase on the degradation of dextran were studied by single factor analysis, and the optimum conditions for the removal of dextran in production of beet sugar were determined. The results showed that on the condition of lower dextran concentration than 1 g/kg in sugar beet, the optimal condition is that concentration of α-dextranase is 5 mg/kg, the reaction temperature is 50-60 ℃, pH is 5.0-7.0, and the effective time is 5-10 minutes. This study effectively solved the problem of high concentration of dextran in sugar beet production and difficulty in filtering intermediate juice, which guaranteed the normal processing of low quality sugar beet, and has a positive guiding significance for the production of beet sugar.
