摘要
本试验旨在研究饲粮中添加不同水平有机硒和无机硒对29~70日龄鹅生长性能、屠宰性能、肉品质和胸肌硒含量的影响。试验选取体重相近的29日龄江南白鹅300只,随机分为6组,每组5个重复,每个重复10只。采用2(硒源)×3(硒添加水平)双因素完全随机试验设计,A、B、C组分别在基础饲粮中添加0.2、0.3、0.4 mg/kg的硒代蛋氨酸(SM,以硒计),D、E、F组分别在基础饲粮中添加0.2、0.3、0.4 mg/kg的亚硒酸钠(SS,以硒计)。试验期42 d。结果表明:1)不同硒源和硒添加水平及其互作效应对鹅生长性能无显著影响(P>0.05)。2)不同硒源和硒添加水平及其互作效应对鹅屠宰性能无显著影响(P>0.05)。饲粮添加SM组的鹅腹脂率有低于饲粮添加SS组的趋势(P=0.059)。3) E、F组的鹅胸肌失水率显著高于A、B、C、D组(P<0.05),D、E、F组的鹅胸肌pH24 h显著低于A、B、C组(P<0.05)。不同硒源和硒添加水平及其互作效应对鹅胸肌剪切力、pH45 min和肉色值无显著影响(P>0.05)。4)硒添加水平为0.3和0.4 mg/kg时,饲粮添加SM组的鹅胸肌硒含量显著高于饲粮添加SS组(P<0.05);硒添加水平在0.2、0.3和0.4 mg/kg时,饲粮添加SM组的鹅胸肌硒含量随着硒添加水平的增加而显著升高(P<0.05)。综上,不同硒源和硒添加水平及其互作效应对鹅的生长性能和屠宰性能无显著影响;与无机硒相比,有机硒能提高鹅胸肌硒含量和肉品质。
This experiment was conducted to study the effects of dietary different supplemental levels of organic selenium and inorganic selenium on growth performance,slaughter performance,meat quality and breast muscle selenium content of geese aged from 29 to 70 days.A total of 300 twenty-nine-day-old Jiangnan geese with similar body weight were selected and randomly divided into 6 groups with 5 replicates per group and 10 geese per replicate.A 2(selenium sources) ×3(selenium supplemental levels) double factor complete randomized experimental design was employed in this trial,geese in groups A,B and C were fed the basal diets supplemented with 0.2,0.3 and 0.4 mg/kg seleno methionine(SM,as selenium),and geese in groups D,E and F were fed the basal diets supplemented with 0.2,0.3 and 0.4 mg/kg sodium selenite(SS,as selenium).The experiment lasted for 42 days.The results showed as follows:1) different selenium sources and selenium supplemental levels and their interaction had no significant effects on the growth performance of geese(P>0.05).2) Different selenium sources and selenium supplemental levels and their interaction had no significant effects on the slaughter performance of geese(P>0.05).The percentage of abdominal fat of geese in dietary SM supplementation group tended to decrease compared to dietary SS supplementation group(P=0.059).3) The breast muscle water loss rate of geese in groups E and F was significantly higher lower than that in groups A,B,C and D(P<0.05),and the breast muscle pH24 h of geese in groups D,E and F was significantly lower than that in groups A,B and C(P<0.05).Different selenium sources and selenium supplemental levels and their interaction had no significant effects on the shear force,pH45 min and meat color value in breast muscle of geese(P>0.05).4) When dietary supplemental levels were 0.3 and 0.4 mg/kg,the breast muscle selenium content of geese in dietary SM supplementation group was significantly higher than that in dietary SS supplementation group(P<0.05);when dietary supplemental levels were 0.2,0.3 and 0.4 mg/kg,the breast muscle selenium content of geese in dietary SM supplementation group was significantly increased with dietary supplemental level increasing(P<0.05).In conclusion,different selenium sources and selenium supplemental levels and their interaction have no significant effects on the growth performance and slaughter performance of geese;compared with inorganic selenium,organic selenium can increase the breast muscle selenium content and meat quality of geese.
