正交优化苜蓿叶蛋白提取工艺条件研究

摘要
文章在单因素试验的基础上,采用L9(33)正交试验对苜蓿叶蛋白提取工艺进行研究。结果表明,最佳工艺条件组合为:料液比1∶20、加盐量4%、pH为5,在此条件下可溶性蛋白的提取率可以达到19.62%。影响可溶性蛋白提取率的因素依次为:料液比>加盐量>pH,絮凝温度在60℃、时间为15min时效果最好。
        In this paper, on the basis of single factor experiment, L9(33) orthogonal experiment has been used to study extraction technique of alfalfa leaf protein. The results show that the combination of optimum technique are as follows:1:20 for alfalfa meal to water ratio, 4% for salt concentration and pH 5 for extraction solution. Under these conditions, the extraction rate of soluble protein can reach 19.62%. It demonstrates that factors affecting extraction rate of soluble leaf protein are that, alfalfa meal to water ratio>salt concentration>pH of extraction solution. Under the condition of 60℃ for congulating temperature and 15min for coagulating time, it can reach the best results.
