摘要
植物叶蛋白营养全面,具有很高的食用价值和药用价值,被广泛应用于食品、饲料和医疗等领域中,是一种极具开发价值的新型蛋白质资源,具有广阔的开发前景。提取叶蛋白的常用方法有加热法、酸碱法、盐析法和有机溶剂法等,对这些提取方法及国内外相关研究进行了综述,以期使这种来源广泛易得的低值原料得以充分提取并实现高值利用。
        The nutrients of plant leaf protein are comprehensive. Leaf protein has high edible value and medicinal value, which can be applied in food, feed, medical and other fields. It is a new protein resources, which has great potential development value. Methods suitable for leaf protein extraction include heating method, heating method combined with acid and alkali treatment, salting-out method and organic solvent method, and so on. This paper summarized leaf protein extraction methods and the related researches both domestic and overseas with an expection that this sort of low-cost material could be fully extracted with proper method and realize its high-value use.
