摘要
选用初始体质量(61.4±1.4)kg相近的长白阉公猪28头,随机分为4个处理组,每个处理组7个重复,每个重复1头猪,饲养期45d。对照组饲喂基础日粮,试验1、2、3组分别在日粮中添加40、80、120mg/kg的氨基酸螯合锌。结果表明:与对照组相比,3个试验组均可显著提高瘦肉率、胴体斜长、45min肉色(P<0.05);试验2、3组的24hpH值显著提高(P<0.05)。试验3组棕榈酸和硬脂酸含量均显著高于其他组(P<0.05);试验3组花生酸含量显著高于对照组和试验1组(P<0.05);各试验组花生-烯酸含量显著低于对照组(P<0.05);试验2、3组二十四碳-烯酸含量显著高于对照组和试验1组(P<0.05)。添加氨基酸螯合锌可提高钠钾泵运转能力(P<0.05);肌肉中Mg、Ca和Cu含量随着氨基酸螯合锌添加量的提高呈峰值规律,分别在添加量为40、80、40mg/kg时达到峰值(P<0.05);锌含量随氨基酸螯合锌添加量的提高而升高,各组之间无显著性差异。结果表明,日粮中添加氨基酸螯合锌可提高长白肥育猪的屠宰性能,改善肌肉饱和脂肪酸含量,且对不饱和脂肪酸组成具有一定的影响,提高机体钠钾转运机能,加强Mg、Ca和Cu在肌肉中的沉积效率。
        In order to study the effects of zinc amino acid chelate on the meat quality traits,fatty acid and mineral element contents in fattening pig,28 Landrace boars with similar an initial weight(61.4±1.4)kg were selected and randomly divided into four groups with 7repeats of 1each.A basal diet was fed in the control group,group 1,2and 3(40,80 and 120mg/kg zinc amino acid chelate)were added in the experimental groups,respectively.The feeding period was 45 days.The results showed that:compared with the control group,the lean meat percentage,carcass length and45 min flesh color in three experimental groups were significantly improved(P<0.05),and the24 hpH was high in experimental group 2and group 3(P<0.05).The contents of C16∶0and C18∶0in experimental group 3were significantly higher than that in other groups(P<0.05),and the content of C20∶0in experimental group 3was markedly higher than that in control and experimental group 1(P<0.05).C20∶0content in three experimental groups was significantly lower than that in the control group(P<0.05).C24∶1content in experimental group 2and group 3was much higher than that in the control and experimental group 1(P<0.05).Zinc amino acid chelate could increase the operation ability of sodium potassium pump in muscle(P<0.05);the contents of Mg,Ca and Cu in muscle were enhanced with the increased amount of zinc amino acid chelate,and reached the peak value in 40,80 and 40mg/kg Zn groups,respectively(P<0.05);zinc content was increased with the increased zinc amino acid chelate,but there was no significant difference among all the groups.This study indicates that the diet supplementation of zinc amino acid chelate could improve the meat quality traits and the content of saturated fatty acid,simultaneously,it may play some role in the content of unsaturated fatty acid,furthermore,it could enhance the Na+-K+transport function and strengthen the deposition efficiency of Mg,Ca and Cu in muscle of finishing pig.
