快速检测技术在果蔬安全控制中的研究进展

摘要
近年来人们对果蔬及其产品的需求逐渐增加,随着生产、加工、销售规模的不断扩大,其产生的食品安全问题成为了人们普遍关注的焦点之一。本文阐述了果蔬在生产、流通等各环节中主要安全风险的来源,包括有机磷和氨基甲酸酯类农药残留、硝酸盐及亚硝酸盐等无机化合物超标、果蔬中有害微生物污染、病原菌毒素积累等,并对果蔬安全检测中快速检测技术(快检技术)的研究进展进行了综述,包括酶抑制法、酶联免疫法、传感器法、拉曼光谱检测法、试纸法、聚合酶链式反应法等。快检技术推进了果蔬安全检测的规范化和标准化,成为执法监管的重要依托,促进了果蔬产业安全持续的发展。
        In recent years,the demands of fruits and vegetables products are growing for people.With the expanding scale of the production,processing and sales,the food safety issues become a focal point.In this review,the main sources of safety risks of fruits and vegetables in the production and circulation were discussed,which included organophosphorus and carbamate pesticide residues,the exceed standard of some inorganic compounds like nitrate and nitrite,the harmful microorganisms contamination and pathogenic toxins accumulation in fruits and vegetables.Additionally,the research progresses on common rapid detection technologies in fruits and vegetables safety test were summarized,which included enzyme inhibition method,enzyme linked immunosorbent assay(ELISA),sensor method,Raman spectroscopy,test paper method,and polymerase chain reaction(PCR),etc.The rapid detection technologies promote the specification and standardization of fruits and vegetables safety test,and they also become the important support for law enforcement departments,which can improve the development of safety and sustainability of fruits and vegetables industry.
