摘要
普洱茶是云南的特有名茶,普洱熟茶是以云南大叶种晒青毛茶为原料,经特定加工工艺制成。普洱茶成品中氧化型茶多酚与其他成分之间的复杂作用导致其成分分析和分离难以进行。由于普洱茶原料的成分较为明确,且发酵过程比较清晰。因此,将原料成分和发酵过程综合起来考虑,普洱熟茶的品质形成机理便会相对明晰。
Pu'er tea is a unique tea in Yunnan, Pu'er tea is made from Yunnan big leaf seed sun-green tea as a raw material. The complex interaction between oxidized tea polyphenols and other components in Pu'er tea products makes component analysis and separation difficult. Because the composition analysis of Pu'er tea raw materials is clear, and the fermentation process is relatively clear. Therefore, considering the combination of raw material components and fermentation process, the quality formation mechanism of Pu'er cooked tea will be relatively clear.
