摘要
目的了解四川省区域内市售食品中双酚A(BPA)和双酚S(BPS)的浓度,为食品污染物的监测和控制提供科学依据。方法采用超高效液相色谱-四级杆串联质谱法(HPLC-MS/MS))对四川境内在售的414份食品进行BPA和BPS监测分析。样品包含罐头、鱼肉、畜禽肉、饮料、谷物(大米、小麦),共5类。结果本次检测的414份食品中295份检测出BPA,检出率71. 3%,浓度为小于检出限到173μg/kg; 98份检测出BPS,检出率23. 7%,浓度为小于检出限到54. 2μg/kg。罐头类食品是BPA检出浓度最高的食品类别(检出率99. 2%,浓度均值:34. 7μg/kg);肉类食品是BPS检出浓度最高的食品类别(检出率:44. 7%,浓度均值:2. 14μg/kg)。结论所监测的食品中大部分都已被BPA污染,罐头类食品污染最为严重;作为BPA替代品的BPS在罐头类食品和谷物中的含量很低,但其在肉类食品中的污染水平与BPA相当。
        Objective To investigate the concentration of bisphenol A( BPA) and bisphenol S( BPS) in the market foodstuffs from Sichuan province,in order to provide the scientific evidence for monitoring and control of food contaminant. Methods A total of 414 samples of market foodstuffs from Sichuan province were analyzed for BPA and BPS,using high-performance liquid chromatography-tandem mass spectrometry( HPLC-MS/MS).The food samples included canned food,fish,meat&poultry,beverage and cereal( rice,wheat). Results BPA was found in 295 food samples with the detection rate of 71. 3% and the concentration was below the limit of detection( LOD) to 173 μg/kg. BPS was found in 98 food samples with the detection rate of 23. 7% and the concentration was below the limit of detection( LOD) to 54. 2 μg/kg. The highest mean concentration of BPA was found in the canned food. The detection rate and the mean concentration was 99. 2% and 34. 7 μg/kg,respectively. The highest mean concentration of BPS was found in fish and meat&poultry. The detection rate and the mean concentration was 44. 7% and 2. 14 μg/kg,respectively. Conclusion A majority of the monitored foodstuffs were contaminated with BPA,of which the canned food were the most serious polluted. BPS,as a BPA substitute,its concentration was quite low in canned food and cereal,but the level of its contamination in meat product was close to that of BPA.
