马奶酒与马奶粉营养成分分析研究

摘要
为了分析马奶酒与马奶粉营养成分含量,试验采用凯氏定氮法、氨基酸自动分析仪法、脂肪测定第一法、原子吸收分光光度法、荧光法、高效液相色谱法、氨水-乙醇提取法等方法对马奶酒和马奶粉中的氨基酸、脂肪酸、维生素、钙、铁、锌、蛋白组、乳糖、脂肪等营养物质进行了测定。结果表明:马奶粉除了γ亚麻酸含量与马奶酒相同以外,其余营养物质均高于马奶酒。然而不同酒精度数马奶酒之间的营养物质含量也有所差异,10°马奶酒和12°马奶酒α亚麻酸和DHA含量为零,花生四烯酸含量相同;10°马奶酒除了维生素B2、维生素A、维生素E和乳糖含量低于12°马奶酒以外,其他营养物质均高于12°马奶酒。
        To analyze the nutrient contents of kumiss and mare's milk powder,amino acid,fatty acid,vitamins,calcium,iron,zinc,protein,lactose,fat,and other nutrients of koumiss and mare's milk powder was determined by Kjeldahl method,automatic amino acid analyzer,acetyl chloride-methanolmethyl esterification method,atomic absorption spectroscopy,fluorescence method,high performance liquid chromatography,ammonia-ethanol extraction,and so on. The results showed that the most nutrient contents of mare's milk powder were higher than those of kumiss,except there was the same γ-linolenic acid content between both of them. However,and there were somewhat different in the nutrient contents between kumiss with different degrees of alcohol,the contents of α-linolenic acid and DHA were zero in kumiss with 10 and 12 degrees of alcohol,which had same arachidonic acid content. The most nutrient contents of kumiss with 10 degrees of alcohol were higher than those of kumiss with 12 degrees of alcohol except its contents of vitamin B2,vitamin A and vitamin E,and lactose were lower than those of kumiss with 12 degrees of alcohol.
