摘要
本文以世界长寿乡蕉岭三圳自然生长的紫云英为研究对象,采用溶剂提取、微波消解、氢化物-原子荧光光谱法等技术,研究了现蕾期、盛花期和成熟期紫云英中硒的赋存形态及其含量变化。结果表明,随着紫云英的生长成熟,总硒含量和有机硒含量逐渐增加,无机硒含量逐渐降低,成熟期总硒达到1 382μg/kg、有机硒达到总硒的93.7%;占主体的有机硒主要以蛋白硒和多糖硒形态存在,并且它们的占比也依次增加,成熟期蛋白硒和多糖硒分别占总硒的76.2%和16.3%;蛋白硒主要表现为易于被生命体吸收的水溶性硒蛋白和碱溶性硒蛋白形态,成熟期分别占蛋白硒量的39.5%和31.2%。
        The binding forms of selenium in Astragalus sinicus grown naturally in world's longevity township Jiaoling county were studied using solvent extraction,microwave digestion and hydride generation-atom fluorescence spectrometry.The content of total selenium,inorganic selenium,Secontaining nucleic acid,Se-containing polysaccharide and Se-containing soluble protein during squaring,full-bloom and maturation stage were respectively measured.The results showed that the content of total selenium and organic selenium were increased,while inorganic selenium was decreased with the growth of Astragalus sinicus.The content of total selenium in the maturation stage was achieved at 1 382μg/kg,in which the organic selenium accounted for as much as 93.7% of total selenium.Se-containing protein and polysaccharide were the major ingredients in the organic selenium,whose percentage were increased with the growth of Astragalus sinicus.The proportion of Se-containing protein and polysaccharide in the maturation stage counted for 76.2% and 16.3%,respectively.Protein selenium existed in the forms of water and alkali-soluble selenium proteins,and they accounted for 39.5% and 31.2% of protein selenium in the maturation stage of Astragalus sinicus,respectively.
