摘要
对香榧及油脂品质进行分析研究,为浙江省香榧资源的综合利用和质量评价提供依据。采用方差分析、主成分分析、聚类分析对香榧及油脂品质进行评价。果实性状指标之间存在显著差异,而理化指标中除蛋白质和出油率与果实性状有相关性,其他均无相关性。主成分分析结果表明:香榧果实性状在品质评价中具有较为重要的作用。对香榧种仁氨基酸组成及维生素分析发现,香榧种仁中含人体必需氨基酸达7种,还含有丰富的维生素E和烟酸,为香榧作为优质蛋白质资源提供了理论依据。对香榧籽油脂脂肪酸组成分析研究结果表明:香榧籽油主要含有12种脂肪酸,不饱和脂肪酸占脂肪酸总量的88.0%,系统聚类分析结果显示,香榧籽油与花生油组成最为相似。果实性状指标在香榧果实评价中具有重要意义,主成分分析结果为香榧品质评价指标的简化提供了可能。香榧籽油的研究结果为香榧籽油做为保健食品提供了参考依据。
        A complete analysis was carried out on nutritional and functional constituents in Torreya grandis and its oil to provide theoretical basis for the use and development of this resource. The quality of Torreya grandis and its oil were evaluated by anova, principal component analysis and cluster analysis. There was a significant positive correlations among some nut traits and was almost unsignificant correlations among physico-chemical indexes but a significant positive correlations among protein、oil yield and nut traits. The results of principal component analysis show that Torreya torreya fruit characters play an important role in quality evaluation. The analysis of amino acids and vitamins found that there were 7 kinds of essential amino acids in Torreya grandis seeds and rich vitamin E and niacin. And it was rich in vitamin E and niacin, providing a theoretical basis for Torreya grandis as high quality protein resources. The results showed that 12 kinds of fatty acids were found. Unsaturated fatty acids account for 88.0% of total fatty acids. The system cluster analysis showed that Torreya grandis seed oil and peanut oil was most similar. The results of pca provide the possibility to simplify the quality evaluation index of Torreya grandis. The research results of torreya oil provide reference for torreya oil as health food.
