氢化大豆油对小鼠肝脏和血液反式脂肪酸含量及脂代谢的影响

摘要
将3周龄的雄性C57BL/6J小鼠随机分为豆油组(对照组)和氢化大豆油组(实验组),每组4只,饲养至8周。应用GC-MS对肝脏和血浆的反式脂肪酸组分进行测定。对小鼠肝脏组织进行苏木精伊红(HE)染色,并对总胆固醇(TC)、甘油三酯(TG)、谷丙转氨酶(GPT)和天冬氨酸转移酶(GOT)进行测定。结果表明,实验组小鼠肝脏和红细胞中含有反十八碳一烯酸(t18:1),而在对照组的肝脏、血浆和红细胞中均未检出t18:1;实验组肝脏细胞脂肪变明显,但未出现明显的炎性浸润。血浆中TC、TG、GPT和GOT指标未出现显著变化。结果提示,氢化大豆油能够影响肝脏及血浆中反式脂肪酸含量,并导致肝脏细胞出现明显的脂肪变。
        Three-week-old male mice C57BL/6Jwere randomly divided into soybean oil group(control group)and hydrogenated soybean oil group(experimental group).Four mice in each group were fed for 8weeks.The trans fatty acids in liver and plasma of mice were determined by GS-MS.The liver tissues of mice were stained with hematoxylin eosin(HE)and the levels of total cholesterol(TC),triglyceride(TG), alanine aminotransferase(GPT) and aspartate transferase(GOT) were determined.The results showed that trans-octadecanoic acid(t18:1)was found in the liver and erythrocyte of mice in experimental group,but not in the liver,plasma and erythrocyte of the control group.In the experimental group,hepatocyte steatosis was more serious,but no obvious inflammatory infiltration.There were no significant changes in TC,TG,GPT and GOT in plasma.The results showed that hydrogenated soybean oil could affect the content of trans fatty acids in liver and plasma,which lead to steatosis of liver cells.
