摘要
以紫苏叶为原料,通过加以白砂糖、柠檬酸、蜂蜜等研制紫苏饮料。采用单因素试验和正交试验确定的最佳配方为:紫苏叶汁30%,白砂糖6%,柠檬酸0.12%,蜂蜜4%。成品紫苏叶饮料颜色呈淡绿色,外观澄清透亮,风味独特,甜度适中,状态稳定。
In the study,Perilla leaf was used as raw material to develop Perilla beverage by adding sugar, citric acid and honey.The optimal formula determined by single factor test and orthogonal test is:Purpura leaf juice is 30%, white granulated sugaris 6%, citric acid is 0.12%, and honey is 4%. The finished purpleleaf beverage is light green in color, with a clear appearance, unique flavor,moderate sweetness, and stable status.
