摘要
本文通过干烧实验,研究干烧时间、火力、燃气、烹饪介质以及干烧次数等因素对304不锈钢锅重金属迁移量的影响。结果表明:以自来水为烹饪介质,在煤气加热条件下,304不镑钢锅具的重金属迁移量受干烧时间,火力和干烧次数的影响较小,但在复杂的菜汤介廣中干烧后,重金属铬和镍迁移量有着明显的增加。利用天然气加热干烧304不锈钢锅易致其重金属铬和樣的迁移量剧增,甚至出现超标。
        This paper studies the effects of dry burning time, firepower, gas, cooking medium and dry burning times on the migration of heavy metals in 304 stainless steel pots by dry burning experiments. The results show that with tap water as the cooking medium,the heavy metal migration of 304 stainless steel pots are less affected by dry burning time,firepower and dry burning times under coal gas heating conditions, but have a significant increase after dry burning in complex vegetable medium, heavy metals such as chromium and nickel. The use of natural gas to heat dry 304 stainless steel pots is likely to cause a dramatic increase in the migration of heavy metals such as chromium and nickel, and even exceeding the standard.
