摘要
以VC为对照品,测定TIP3C对羟自由基、超氧阴离子自由基、DPPH自由基和ABTS自由基的清除能力,研究黄鳍金枪鱼头多肽TIP3C的体外抗氧化活性。结果表明,TIP3C对4种自由基均具有较强的清除作用,且清除率都随着质量浓度的增大而显著增加(p<0.05),剂量效应关系明显;TIP3C对羟自由基、超氧阴离子自由基、DPPH自由基和ABTS自由基的清除IC_(50)分别为1.724,0.985,2.434和0.242 g/L。TIP3C具备较高的抗氧化能力,为其作为抗氧化肽的开发利用提供理论依据。
        Investigate the antioxidant effects of Thunnus albacares head polypeptides(TIP3C) in vitro. The scavenging capacities of TIP3C on OH·, O_2~-·, DPPH· and ABTS· were assayed in contrast with VC. The experimental results indicated that TIP3C had strong effect of scavenging on OH·, O_2~-·, DPPH· and ABTS·. The IC_(50) were 1.724, 0.985, 2.434 and 0.242 g/L, respectively. Moreover, with the increase of the concentration of TIP3C, the scavenging rate of OH·, O_2~-·, DPPH· and ABTS· increased significantly(p<0.05) in a dose-dependent manner. Therefore, TIP3C has strong antioxidant capacity and it provided a theoretical foundation for the development and utilization of antioxidant peptides.
