摘要
食味品质是构成稻米品质的重要性状,目前主要以直链淀粉含量、胶稠度等理化指标进行评价,但仍不能全面准确反映米饭食味品质的优劣,成为困扰水稻品质育种的难题之一。近年研究表明,胚乳细胞壁的含量和组分与稻米食味品质密切相关,为水稻品质研究开拓了新思路。基于此,对水稻胚乳细胞壁的品质效应及其遗传研究领域取得的进展进行探讨,以期为稻米食味品质改良路径提供有益补充和理论依据。
        At present,the eating quality of rice is mainly evaluated by amylose content,gel consistency and other physical and chemical indexes,but the quality of rice is still not completely and accurately reflected,which has become one of the difficult problems in rice quality breeding. Recent studies have shown that the contents and components of endosperm cell wall are closely related to the eating quality of rice. Based on this,the quality effect of endosperm cell wall and its genetic research progress were discussed in order to provide beneficial supplement and theoretical basis for the improvement of rice eating quality.
