摘要
针对目前食品科学与工程专业学生普遍存在实践能力不强、缺乏工作竞争能力等诸多问题,结合吉林大学食品科学与工程专业食品工艺学实验教学的多年经验积累,并基于我院实验教学中心的工业化生产线,本文对食品工艺学实验课的改革与实践措施进行了概述。通过此课程的建设,学生不仅能够深入理解食品工艺学课程中的理论环节及食品加工技术环节,还能培养学生的工程意识、创新能力与实践能力,为学生毕业后从事食品行业的相关工作奠定了坚实的基础。
At present, most of the students in Food Science and Engineering Specialty have poor practicing ability and are lack of competitive ability in work. This paper summarized the reform and practice measures based on many years of experience accumulation in the experiment teaching of Food Science and Engineering Specialty in Jilin University, as well as the industrialized lines in our experimental teaching center. Through the construction of this course, the students can not only understand the theoretical knowledge and the food processing technology of food technology courses, but also develop the students' engineering awareness, innovation and practical ability,even lay a foundation for the students who will engage in the work of food industry after graduation.
