基于Web of Science的食品科学文献计量学研究

摘要
以美国ISI Web of Knowledge的Web of Science引文数据库为检索对象,以食品为主题词,检索了2002年-2011年该库收录的有关食品科学研究相关的文献;利用文献计量学的方法对这些检索到的文献进行了统计分析,探讨了不同国家的发文量、文献来源期刊及论文学科分布等情况。结果显示,食品科学研究发文量逐年增加,其中发文量最多的国家是美国,而中国的发文量逐年迅速增加;主要的学科类别为食品科学技术、环境科学生态、营养饮食学等;发文期刊为Journal of Agricultural and Food Chemistry,Food Chemistry,Journal of Food Protection等。虽然食品科学与技术仍是目前食品科学研究的热点,但与生物学、化学、营养学,以及医学等交叉的学科也将是未来食品科学研究的重点方向。通过分析食品科学研究的总体状况和发展态势,为食品科研工作者及决策者提供参考,也为期刊组稿、约稿提供指导。
        In present paper, the Web of Science reference database of US. ISI Web of Knowledge was used as target, food was used as subject word to search all related references about food science published during 2002-2011. The retrieved results were statistic analyzed by metrology method with the purpose to investigate the number of published paper by different countries, the literature resource and the subject distribution, etc. As shown in the results, the number of published paper related with food science increased year by year. Although the United States always takes the greatest paper published number, the number of China increased much more rapidly. The main subjects included Food Science Technology, Environmental Sciences Ecology and Nutrition Dietetics, etc. The main publishing journals were Journal of Agricultural and Food Chemistry, Food Chemistry, Journal of Food Protection and so on. It was put forward that although food science and technology related research is still the hotspot in the research area of food science, the obliquitous subjects could be an important direction of food science research, such as that intercrossed with biology, chemistry, nutriology, medicine, etc. Taken together, the present analysis of general situation and development trend about food science research, could provide a reference for food researchers and decision makers, as well as provide guidance for journal editors to solicit and invite manuscripts.
