烹饪实验室安全教育微课设计与制作

摘要
本文针对当前学生缺乏烹饪实验室安全知识及对安全事件防范意识不强的现状,提出以互联网+微课形式对学生进行烹饪实验室安全教育,并对烹饪实验室安全教育微课体系建设进行详细地论述,涵盖烹饪实验室规章制度类、器具质量安全问题、器具使用操作问题、烹饪原料安全问题、烹饪过程安全问题消防管理安全问题、用电用气安全问题等。并以器具的使用操作问题为例,制作微课,展示烹饪实验室安全教育微课形式。
In view of the present situation that current students lack of cooking lab safety knowledge and the weak awareness of the security incident, this article put forward the cooking laboratory safety education for students in form of Internet + micro-lectures, as well as discusses the construction of the micro course system of safety education in cooking Laboratory in detail, covering the cooking lab quality safety, rules and regulations, instruments, using the operating problems, security cooking materials, cooking process safety fire control security, electricity gas safety management, etc. Besides, taking the use of equipment as an example, this article produces micro-lectures to show the cooking lesson laboratory safety education form.
