摘要
【目的】建立高效快速的紫色叶用莴苣花青素含量检测方法。【方法】以4个紫色叶用莴苣品种为试材,利用分光光度计和色差仪分别测定其花青素含量和色差指标,并对6个色差指标与花青素含量进行相关与回归分析。【结果】结果表明:品种Z14中花青素含量最高,Z38最低;叶片色差指标中除h以外,L、a、b、C、H均能反映花青素含量变化;以5个色差指标值分别与花青素含量建立回归方程,其中H与花青素含量之间的回归方程相关系数最大,为0.806。【结论】成功建立依赖色差仪测定色差指标快速测定紫色叶用莴苣中花青素含量的体系。
        【Objective】To establish a fast method for determining anthocyanin content in purple lettuce.【Methods】Four purple lettuce cultivars were selected as material,and the anthocyanin contentand color difference were analyzed using spectrophotometer and colorimeter.Correlation and regression analysis between the color difference parameters and content of anthocyanin was conducted.【Result】The results showed that highest content of anthocyanin was detected in Z14,while the lowest in Z38.Significant correlations were occurred between all the color difference parameters and content of anthocyanin except for h.Regression equation were established between anthocyanin content and five color difference parameters respectively.The correlation coefficient of regression equation between H and anthocyanin content was the highest(0.806).【Conclusion】Anthocyanin concentration in purple lettuce can be quickly determined by measuring color difference parameters using a colorimeter.
