南极磷虾解冻过程中氟的迁移变化规律研究

南极磷虾是新兴的极地渔业资源,富含多种营养物质,是重要的食品蛋白库。南极磷虾中氟含量高,制约着其高值化利用。为阐明南极磷虾解冻过程中氟的迁移机制,研究了南极磷虾在4℃,25℃解冻过程中氟的迁移变化规律。结果表明,解冻时间和解冻温度对整虾中的总氟含量影响不显著,对虾壳和虾肉中总氟含量影响显著。解冻时间和解冻时间对虾壳和虾肉中几种赋存形态氟的含量影响显著。4℃、25℃解冻期间,虾壳和虾肉中总氟含量变化差异显著。虾壳中总氟含量先下降后稳定,虾肉中总氟含量先升高后稳定。虾壳中含量最高的可交换态氟,随着解冻时间的延长,呈现下降趋势。其他几种形态氟含量相对稳定。虾肉中可交换态氟的含量最高,其次是水溶态氟,这两种赋存形态氟含量的加和占五种赋存形态氟总量的90%。
Antarctic krill is known as " food bank for the world's future" for its huge resources reserves and rich nutrition.But high fluoride content limits the development and utilization of Antarctic krill.Migration and variation of fluoride content during thawed at 4℃ and 25℃ was studied.The results showed that temperature and thawing storage time had no effect on various combined forms of fluorine in whole krill.Both thawing storage time and temperature had a significant effect on various combined forms of fluorine in krill carapace and muscle.During the period of storage in 4℃ and 25℃,difference in fluorine content in krill carapace and muscle was significant.Fluorine content in krill carapace was gradually reduced,while fluorine content in krill muscle was gradually increased in the first stage and then was stable.According to a research on various combined forms of fluorine,the content of exchangeable fluorine in krill carapace and muscle was the highest,it was reduced during the storage.
