菠萝叶可溶性膳食纤维酶解法提取工艺的优化

摘要
以菠萝叶为原料,采用酶解法提取可溶性膳食纤维(SDF)。通过单因素试验分别考察了料液比、酶解溶液pH、纤维素酶用量、酶解温度、酶解时间5个因素对菠萝叶SDF得率的影响,并在此基础上,利用正交试验优化菠萝叶SDF的提取工艺。结果表明,菠萝叶SDF酶解法提取的优化工艺为料液比1:30(g/mL)、酶解溶液pH 4.6、纤维素酶用量30U/g、酶解温度40℃、酶解时间2.5 h,在此条件下,菠萝叶可溶性膳食纤维的得率可达8.03%。
The soluble dietary fiber was extracted from pineapple leaf by enzymatic extracting method.The liquid-solid ratio,pH,cellulose quantity,extraction temperature and extraction time on the extraction yield of soluble dietary fiber were investigated.The optimal extraction condition of soluble dietary fiber was studied by the orthogonal test.The optimal extraction condition were as follows:liquid-solid ratio was 1:30(g/mL) at pH 4.6,cellulose quantity was 30 U/g,extraction temperature was 40 ℃ and the extraction time was 2.5 h.Under the optimal extraction,the yield of soluble dietary fiber was determined to be 8.03%.
