公众对食品添加剂风险认知现状调查

目的:了解公众对食品添加剂的风险认知现状,为食品添加剂风险交流对策的制定提供参考依据。方法:2015年12至2016年3月,对全国23个省/直辖市/自治区共4200名公众开展了食品安全风险公众认知调查,运用SPSS19.0软件进行统计分析。结果:(1)公众对食品添加剂处于"高关注,低认知"的状态,其中73.15%的公众对食品添加剂较为关注,但能正确辨析食品添加剂与非法添加物的调查者仅占到两成;(2)91.64%的被调查者对使用食品添加剂感到担心,担心的最主要原因是对食品添加剂安全性及科学性的疑问;(3)购买食品时会关注食品添加剂信息的公众占比为21.46%。结论:交流机构与公众在食品安全风险/事件上应保持关注点相似或一致,合理规划交流内容与策略,加强对食品添加剂的科学认知,提高公众对食品添加剂和非法添加物的辨析能力,降低高风险感知。
Objectives:This study investigated public's cognition of food additives,aiming to support the government's stratages for risk communication.Methods:The survey was conducted among the 4200 consumers from 23 provinces through questionnaire survey From December 2015 to March 2016,the data was analyzed by SPSS19.0 software.Result;(1) Public's attention on food additives is in a high focus but low cognition.73.15%respondents pay more attention on food additives.But can not correctly distinguish between food additives and illegal additives.(2) Among the participants,91.64%worried about the use of food additives,and the main reason is that the food additives' security and scientificity are questioned.(3) 21.46%of respondents pay attention on food additives information When they buy food.Conclusion:Chinese risk communication institution should keep pace with the public in the food safety risk/event,planning reasonable content and communication strategy,improving the public's ability to distinguish between food additives and illegal additives,decreasing the high risk perception.
