天然食品防腐保鲜剂的研究进展

摘要
食品防腐保鲜剂是食品加工与贮藏过程中一种重要的添加剂,能够保证食品的营养,利于食品的长期保存,以减少由于食品在物理、生化等条件的作用下造成的营养成分的流失,甚至变质。但不合理地使用食品添加剂,会对食品质量造成不良的影响,使得食品的安全受到一定的威胁,所以食品防腐保鲜剂要求具有无毒、高效、少残留、对人体无害等特点。本文介绍了食品防腐保鲜剂的作用机理,概述了天然食品防腐保鲜剂的种类,分析当前食品防腐保鲜剂的进展实际,对天然食品防腐保鲜剂的发展前景进行了展望并提出相关意见和建议,旨在促进天然食品防腐保鲜剂的持续发展,保证食品的安全。
Food preservative antistaling agent is a essential additive in the processing and storage of food,which can ensure food nutrition and be conducive to long-term preservation of food,to reduce the loss of nutrients even food spoilage caused by physical and biochemical reactions.But the unreasonable use of food additives can cause bad influence on food quality and develop a potential risk to food health.So,food antiseptic and preservation agent need have characteristics of asepsis,few remainder and high efficiency.In this paper,the mechanism of the food antiseptic and preservation agent is introduced,the category of natural preservative antistaling agent is summarized,and the progress of the current food preservative antistaling agent is analyzed.Furthermore,the prospect and developing trend of natural food preservative antistaling agent is discussed,aiming to promote the sustainable development of natural food antiseptic antistaling agent and ensure the safety of food.
