大肠杆菌在鱼鳞上形成生物被膜的动态过程及电解水对其清除作用

摘要
大肠杆菌作为一种致病菌,会导致鱼类制品原料的污染,对人体健康造成危害。本次研究的主要目的是研究大肠杆菌在鱼鳞表面形成被膜的动态过程、酸性电解水对其清除作用以及酸性电解水对生物被膜内的大肠杆菌的杀死作用。本次研究主要运用了扫描电镜、提取生物被膜的主要成分以及活菌计数方法来表征实验结果。结果表明:大肠杆菌可以在鱼鳞表面形成生物被膜;电解水对鱼鳞表面的大肠杆菌被膜具有清除作用;酸性电解水对生物被膜里面的大肠杆菌也具有杀死作用。大肠杆菌会在鱼鳞表面形成生物被膜,电解水不仅可以用来清除大肠杆菌在鱼鳞表面形成的生物被膜,还可以杀死生物被膜里面的大肠杆菌。这次研究为清除鱼类制品表面的生物被膜以及杀死生物被膜里面的细菌提供了一种新的、有效的方法。
Escherichia coli is a pathogenic bacteria capable of forming biofilms on fish scale,a pathway leading to cross contamination on fish.In this study,the ability of Escherichia coli form biofilm on the surface of fish scale,the removal effect of Acid Electrolytic Water(AEW) on biofilm formed by Escherichia coli on the surface of fish scale and the capacity of AEW to kill bacteria living in biofilm were investigated.Scanning electron microscope(SEM),Extraction of the main components of the biofilm(Extracellular polysaccharides and Protein) and plate-counting were used to evaluate biofilm formation and the eradicate effect of AEW.The results indicated that Escherichia coli can form compact biofilm on the surface of fish scale,AEW has an strong effect of biofilm removal.However.SEM showed that strcture of biofilm treated by AEW was destroyed,the biofilm became thin and scattered instead of compact.In addition,most of the bacterias living in biofilm were died after treated by AEW.Escherichia coli can form bilfilm on the surface of fish sacle;AEW can used to clear up biofilm formed on the surface of fish sacle efficiently;AEW can kill bacteria living in biolfilm.This study provided a new way to prevent contamination on fish,caused by Escherichia coli living in the biofilm.
