家禽卵黄脂肪酸结构调控研究进展

摘要
n-3高不饱和脂肪酸(n-3PUFA)在膳食中普遍不足,常规鸡蛋(n-6):(n-3)脂肪酸比值多在(10~20):1,远超膳食推荐值(2~4):1,致使心血管疾病、类风湿性关节炎与癌症等发病率上升。本文总结了给蛋鸡饲喂多种富含n-3PUFA的日粮,可显著提高其在蛋黄中含量,降低蛋黄(n-6):(n-3)比值。n-3PUFA在蛋黄中沉积约需4周趋于稳定,同时饲喂抗氧化剂将降低其氧化易感性,提高沉积率。提供n-3脂肪酸陆地原料主要富含α-亚麻酸,代表的有亚麻、亚麻荠、大麻、鼠尾草籽、Canola菜籽、大豆等;海洋原料主要富含长链n-3PUFA,为多种鱼油、鱼粉以及海藻。当日粮饼类添加不超10%、鱼油不超3%,对蛋鸡生产性能与鸡蛋风味不会产生负面影响。其他蛋禽像蛋鸡一样也可通过日粮调控产出富ω-3 PUFA禽蛋。
