低场核磁共振技术在食品中的研究进展

摘要
低场核磁共振(LF-NMR)分析技术是一种新兴的快速检测技术,广泛用于岩石物性参数的测量。近年来,低场核磁共振分析技术因其快速、便捷、无损、精准的特点在食品领域得到极广泛的应用,但我国对低场核磁共振分析技术的研究还处于初级阶段。本文主要介绍了低场核磁共振的理论知识,综合阐述了国内外学者对低场核磁共振分析技术在食品中水分流动性观测、食品品质研究、固体脂肪含量(SFC)测试、食品加工过程实时监测、食品安全监测、果蔬无损检测以及水分、油分含量测定(选种育种)七大方面应用的研究,分析了传统方法与低场核磁共振(LF-NMR)分析技术的优缺,提出了将其与其他设备及方法联用以便达到更好的效果,得出更全面的数据,旨在推动低场核磁共振分析技术在该领域中更广泛的应用,致力于实现在线检测、批量检测以及活体检测,从而提高效率,推动产业化发展。
Low field nuclear magnetic resonance(LF-NMR) analysis is a new rapid detection technology,which is widely used in the measurement of physical parameters of rocks.In recent years,low field nuclear magnetic resonance technology has been widely used in the field of food because of its fast,convenient,nondestructive and accurate characteristics.But It is still in the primary stage about the research of low field nuclear magnetic resonance technology in our country.This study is mainly about the theory about the low field nuclear magnetic resonance,and synthetically expound that the research on the application of low field nuclear magnetic resonance technology in food by of domestic and foreign scholars which mainly about water mobility observation,food quality,solid fat content(SFC) test,real-time monitoring of food processing,food safety monitoring,fruits and vegetables nondestructive detection,water and oil content determination(breeding).This sutdy has analyzed the advantages and disadvantages of traditional method and LF-NMR,and proposed to use it in combination with other devices and methods in order to achieve a better effect,and to obtain more comprehensive data.Aimed at promoting the application of low field nuclear magnetic resonance analysis technology in the food field,it is committed to realize online detection,batch detection and in vivo detection,so as to improve efficiency and promote the development of industrialization.
