苹果酒的产业化研究

摘要
随着我国水果种植业的集约化发展,苹果连年增产增收,以浓缩果汁和罐头加工为主要形式的苹果深加工产业应运而生,但仍不能有效地解决鲜果滞销、积压、腐烂的现实问题。目前,以浓缩果汁为原料酿造苹果酒的研究工作取得了成功,为苹果的深加工开辟了一条新途径,大大提高了苹果的附加值,具有良好的经济效益和社会效益。因此,利用丰富的苹果资源开发果酒产业,大力推进苹果酒产业化进程,是促进我国水果业健康发展,国民经济快速增长的迫切需要。
     本课题正是着眼于这一紧迫的社会需要,对苹果酒实现产业化进行了深入的试验研究。在过程控制方面,对发酵容积扩大后,发酵温度、发酵时间、溶O_2量、搅拌频率等工艺参数进行了优化筛选,并对最佳操作工艺过程做了进一步的稳定性试验。在保证苹果酒营养成分和风味物质不受影响的情况下,获得了工业化生产的工艺条件和工程工艺参数。在应用研究方面,对苹果酒产业化经营的基本框架结构进行了初步设计,并对其所取得的经济效益做了具体的分析和评价,客观地展示了对苹果酒实施产业化的切实可行性。
     本项目的完成,对果酒行业低温控温发酵技术起到了积极的示范和推广作用,为做好苹果酒产业化工作提供了有力的依据。同时,对建设单位进行项目投资决策具有可靠的参考价值,为陕西早日实现由苹果大省转变为苹果强省的战略目标迈出了坚实的一步。
With the development of the fruit plant products industry, apple yield is increased year and year. So the deepen machining industrialization of apple which concentrated juice and canned goods are main way is set up. But the reality problem that the fresh fruit is unmarketable, overstocked and rotten can't be still resolved effectually. At present, the study on cider which is brewed with concentrated juice has succeed and a new way to improve the apple extra value has been established, which has good economic and social benefits. Therefore, the cider products can be developed and the progress for fruit industrialization can be promoted strongly by using rich apple resource, which is urgent need for citizen economy increasing rapidly.
    According to social request, the practice research for cider industrialization is deepened. On the side of process control, the technologic paramenters of fermentation temperature, fermentation time, O2 quantity, mixing frequency etc. are culled and optimized after enlarging the fermentation volume, and optimum operating technological process is made stable test. Retained cider nutrition and flavor substance basically, the technologic condition and project parameters for industrialization are gained. In the experiments about the application, the basic tram-work of cider industrialization has been made preliminary design and its economic benefit has been analyzed and evaluated, which reveals the feasibility for cider industrialization.
    Accomplished the project, it acts as setting an example and extending for low temperature control fermentation technology with cider industry, as well as provides a powerful basis of cider industrialization, meanwhile, applies a reliable reference value for investment item of construction unit and steps a pace for shaanxi's cider industry powerfully.
