蔬菜抗坏血酸含量与其相关酶活性的关系

摘要
本试验以菠菜、番茄和甜椒的叶片和抗坏血酸(AsA)含量差异较大的甜椒、番茄、马铃薯、萝卜和黄瓜的产品器官为试材,研究不同叶龄和不同发育期产品器官AsA含量与其相关酶活性,并分析它们之间的相互关系。试图阐明不同物种间蔬菜AsA含量存在差异的生理原因。主要研究结果如下:
     1.甜椒、番茄、马铃薯、萝卜和黄瓜的产品器官AsA含量均随其发育进程一直升高。5种蔬菜不同发育期产品器官的AsA含量与DHAR和GalLDH活性变化趋势基本一致,AsA+DHA含量与GalLDH活性的变化趋势也基本一致。
     2. 5种蔬菜产品器官形成末期AsA含量与DHAR活性呈显著正相关(r=0.9423,P<0.05),与GalLDH活性的相关性也较显著(r=0.8597,P<0.10),AsA+DHA含量与GalLDH活性相关性明显(r=0.7904,P<0.15)。AsA含量与MDHAR、AAO和APX活性无显著相关性。
     3.不同物种蔬菜产品器官AsA含量存在较大差异的原因与其GalLDH和DHAR活性存在较大差异密切相关,MDHAR、AAO和APX活性不是影响其AsA含量的主要因素。
     4.菠菜、番茄和甜椒叶片AsA和AsA+DHA含量均以衰老叶为最低。而其叶片GalLDH活性随叶龄的增加逐渐降低,最终GalLDH活性也均以衰老叶为最低。说明3种蔬菜叶片GalLDH活性与其AsA含量密切相关。
     5.随着菠菜、番茄和甜椒叶龄的增加,DHAR、MDHAR和GR活性均是在衰老叶中最低,其中菠菜和番茄叶片DHAR活性变化趋势与AsA和AsA+DHA含量的变化趋势一致。APX和AAO活性的变化与AsA含量的变化无明显规律性,说明APX和AAO活性不是影响叶片AsA含量的决定因素。
The leaves of spinach , potato and sweet pepper and the product organs of sweet pepper, tomato, potato, radish and cucumber that AsA contents have significant difference were used to investigate the relation between AsA contents and relative enzymes activities at different development stages.The results showed as fllows:
     1. AsA contents in product organs of sweet pepper, tomato, potato, radish and cucumber increased during the development,reaching maximum at anaphase of product organs.The results showed that changes of AsA contents were accordant with GalLDH and DHAR activities and AsA+DHA contens were accordant with GalLDH activities in product organs at different development stages.
     2. Correlation between AsA contents and relative enzymes activities at anaphase of product organs showed that AsA contents and DHAR activities were significantly positively correlated(r=0.9423, P<0.05), AsA contents and GalLDH activities were considerably positively correlated ( r=0.8597, P<0.10),AsA+DHA contents had clear pertinence with GalLDH activities(r=0.7904, P<0.15),but AsA contents had no clear pertinence with MDHAR,AAO and APX activities.
     3. The result from the experiment indicated that AsA contents were strongly affected by the GalLDH and DHAR activities, but MDHAR,AAO and APX activities were not the main factors in influencing the AsA contents in product organs of different vegetable species.
     4.In the leaves of spinach, potato and sweet pepper, AsA and AsA+DHA contents reached minimum in aged leaves, GalLDH activities reached minimum in aged leaves too.The changes of GalLDH activities were accordant with AsA and AsA+DHA contents. It explained that GalLDH activities can be one of the indirect sign of the AsA contents in the leaves of spinach, potato and sweet pepper.
     5.DHAR、MDHAR and GR activities reached minimum in aged leaves,and the changes of DHAR activities were accordant with AsA and AsA+DHA contents in the leaves of spinach and potato. AsA contents had no clear pertinence with AAO and APX activities, it is proposed that AAO and APX activities were not the main factors in influencing the AsA contents in vegetable leaves.
