摘要
以钦州湾栉江珧(Atrina pectinate)为研究对象,对其一般营养成分(总蛋白、总脂肪、灰分、水分)和脂溶性藻毒素(Lipophilic algal toxins,LATs)进行分析和评价。研究结果如下:(1)栉江珧水分、灰分、总蛋白、总脂肪的质量分数分别为82.2%、1.10%、14.2%、0.52%;氨基酸总含量为92.4 mg/g,必需氨基酸种类齐全且含量较高,营养价值高;鲜味氨基酸(CFAA)所占比例高达55.5%;栉江珧不饱和脂肪酸总量占脂肪酸总量的11.8%,而饱和脂肪酸占脂肪酸总量相对较高(88.2%),可与其他不饱和脂肪酸高的食物食用,以提高其营养价值;(2)小鼠生物法结果表明,栉江珧中不含腹泻性贝类毒素(Diarrhetic shellfish toxins,DSTs)或毒力值低于0.05 MU/g,进一步通过液-质联用法分析栉江珧中10种典型脂溶性藻毒素(OA、DTX1、YTX、homo-YTX、AZA1-3、GYM、SPX1和PTX2),表明无腹泻性贝类毒素及其他脂溶性藻毒素成分。因此通过研究结果表明,相对其他经济贝类,该贝类是一类高蛋白,不易沾染脂溶性藻毒素,为比较健康安全的海洋珍品。
        The general nutrient composition(total protein, total fat, ash, moisture) of Atrina pectinata from Qinzhou bay and the nutrient composition and saxitoxin of Atrina pectinata were analyzed and evaluation. The results showed that:(1) The contents of moisture, ash, total protein and total fat were 82.19%, 1.10%, 14.21%, 0.52%. The total amino acid content was 92.40 mg/g, the essential amino-acid are available in a wide variety and high content with high nutritional value. Flavor amino acid(CFAA) accounted for 55.52% of the total amino acid; the unsaturated fatty acids accounted for 11.79% of the total fatty acids and unsaturated fatty acids accounted for 88.18%, it's able to eaten with other foods that are high in unsaturated fatty acids to improve their nutritional value.(2) The content of diarrhea shellfish poisoning was measured by biological method, results show that the toxicity value was less than 0.05 MU/g, it's conform to national food safety law of the limited standard of shellfish poisoning. The Atrina pectinata in Qinzhou Bay is a high-protein, low toxicity, delicious, health and safety seafood, it is worthy of large-scale multiply.
