决明子的开发利用现状及发展趋势

摘要
决明子是一种营养丰富的食药两用的原料,广泛分布于在全国大部分地区。大量研究证实,决明子不仅含有许多药用成分,同时还含有多种维生素和丰富的氨基酸、脂肪、碳水化合物等,具有清肝火、祛风湿、益肾明目、抗氧化、降血压、降血脂等多种功能。近年来,保健食品日益受到人们的重视,一些药食同源的物质也作为生产原料用于保健食品的开发,决明子就是其中之一。本文介绍了决明子及其化学成分,综述了决明子的药理作用,及其在食品行业中加工利用的情况,以期为决明子加工产业的健康快速发展提供参考。
        Catsia tora Linn is a nutritious raw material for both food and medicine, which is widely distributed in most parts of the country. Many studies have confirmed that it not only contains many medicinal ingredients, but also contains a variety of vitamins and rich amino acids, fats, carbohydrates, etc. It possesses many functions, such as clearing liver heat, dispelling rheumatism, nourishing kidney and improving eyesight, antioxidation, lowering blood pressure, lowering blood lipid and so on. In recent years, people pay more and more attention to health food, some food and drug homologous substances have also used as raw materials for the development of health food, and cassia seed is one of them. This paper introduced cassia seed and its chemical composition, and reviewed the pharmacological effects of cassia seed and its processing and utilization in the food industry, in order to provide reference for the healthy and rapid development of cassia seed processing industry.
