摘要
韩国又松大学应用本科餐饮烹饪专业的课程设置先进,教育特点鲜明,其专业技能实训课程比例高,实训课程采用"Block Scheduling"授课模式,充分利用学校既有的实训场地优势,建设特色餐厅,拓宽学生社会实践渠道等方面的做法更能体现应用型本科烹饪教育的特点,适应培养行业需求的餐饮应用型人才要求。希冀对我国烹饪专业教育的学科建设与教学改革提供一定的借鉴。
The applied undergraduate culinary program in Wooson University of South Korean is of advanced course design,high proportion in professional skill training. The mode of Block Scheduling is adopted in training courses. Making full use of available training venue,specialty restaurants were built up to widen the social practice channels for students,which presents the distinction fitting well the applied education for undergraduates majoring in culinary science and meets the demand of catering industry for applied talents,and could be a good reference for culinary education in China.
