摘要
微生物来源蛋白酶是工业酶制剂的主要来源,随着蛋白酶的深入研究,微生物来源蛋白酶得到了广泛的应用,在食品工业等领域中扮演着重要的角色。文章综述了微生物来源蛋白酶的研究现状及在工业领域的应用情况,最后简单介绍了微生物来源的蛋白酶存在的问题及发展方向。
        As the main source of industrial enzyme preparation, microbial source protease has been widely used with the further research of protease, which plays an important role in food industry and other fields. This paper summarizes the research status of microbial protease and its application in industry. Finally, the problems and development trend of microbial source protease are briefly introduced.
