•: A natural N-acetylglucosaminidase (NA) was isolated from ascidian viscera proteins.
•: Ovalbumin (OA) was mixed with ascidian viscera NA (AVNA).
•: OA was isolated from AVNA-treated OA (iOA) using anion-exchange chromatography.
•: Terminal GlcNAcs in iOA were cleaved and the allergenicity of iOA was reduced.
•: This is the first study of reduction of OA allergenicity with AVNA.
