Besides the intensely studied proteinogenic amino acids, there are a large number of non-canonical amino acids to explore. We give an overview of natural aliphatic amino acids up to a side chain length of five carbons, without ring structures. Non-proteinogenic aliphatic amino acids are of interest for numerous medical and pharmaceutical applications. Many non-proteinogenic aliphatic amino acids are found within fungi. Several classes of aliphatic amino acids can be enumerated by methods from mathematical chemistry.
