An exotic fruit juice with stevia is treated by electrotechnologies and ultrasounds processing. Two equivalent energy inputs (32–256 kJ/kg) of non-thermal technology are assayed. Bioaccessibility is studied through an in vitro model. Report an increase in bioactive compounds bioaccessibility after pulsed electric.
